I don’t know about you guys, but summer is a busy busy time for us. It always seems like there’s more and more birthdays, BBQs, picnics and mouths to feed. Sometimes it gets too overwhelming. And sometimes, we’re just not prepared. So sometimes, we gotta cheat a little bit.
I don’t know how this happens, but I always get stuck bringing dessert. Don’t get me wrong, I love baking (and eating sweets). But when given a 2 hour time frame, making something delicious and visually appealing seems like a daunting task – if not an impossibility. Finish work, pick up groceries, get home, shower, get dressed, beautify, make a cake AND be at a party for 9 pm? Challenge Accepted (picture the meme, no time to make one).
DON’T PANIC. We got you.
I’ve been in this scenario enough times that I have concocted a secret weapon. This one-bowl, two-step cake basically makes itself. After you mix the ingredients and pop it in the oven (7 mins max), the only thing on your mind for the next hour should be picking an outfit.
I have never shared the recipe (no matter how many times my friends have begged) for fear of being chastised for using boxed ingredients. Well, I’m a workin’ girl now and Time is never on my side. Don’t judge until you’ve tried it. This cake is fierce: surprisingly moist and delicious. One bite and I promise you will be utterly astounded and confused as to how this whole thing is possible.
Ingredients:
1 box of Devils Food Dunkin Hines cake mix
1 box of instant chocolate pudding (devils food or dark chocolate)
1 cup sour cream
4 eggs
½ cup of veggie oil
½ cup of water
1 cup mini chocolate chips
Betty Crocker cream cheese frosting
Fun sprinkles
Directions:
- Preheat oven at 350F.
- Mix together all ingredients except chocolate chips.
- Spray Bundt pan with non stick spray.
- Pour ½ of the mixture into Bundt pan then sprinkle bag of mini chocolate chips, then cover with remainder of cake mix.
- Bake for 55-60 min.
- Remove from oven and let cool completely.
- Flip it out of the pan, make sure it is cold to the touch.
- Frost the cake and add sprinkles (this can be done on site, if youre really pressed for time- takes about 5 minutes)
