SUMMER IS HERE. What better way to welcome it than with a BBQ season induction ceremony?? I know, right? that’s exactly what my girls and I thought too!! Our little informal gathering called for a) wine b) something easy, fun, yummy c) scandalous single ladies stories. When one thinks of summer food, the habitual instinct is: Burgs, Dogs, Steaks and the like. While I do love my meat, there is a time and place for a greasy sausage (post bull-riding at Chez Serge on St-Jean?). Tonight’s dinner was inspired by refined terrace/bar food, with an emphasis on variety and, well, prettiness. The good ol’ Q, Barbie-Style.
While there is’t much to actually prepare for this meal, it can be a little time consuming (especially with a tiny charcoal grill). But all that really means is that we had more time to listen to FlimseyGoods describe her amazing trip to Peru and to give Jr. some dating advice about guys who seem “sooooo nice”. Good laughs, good friends, good food, isn’t that what summer’s all about?
If you haven’t tried Pizza on the BBQ, you’re in for a treat. The best part about this method is that the bottom crust becomes perfectly crispy, while the toppings absorb a smoky flavour. You can experiment with several kinds, which makes it easy to cater to vegetarian friends AND carnivores in one go. You can also make these as appetizers or in batches as finger-food throughout an wine-infused evening.
A word on ingredients… I like getting the ultra thin crust square pre-made pizza dough (it looks like Matzo but less of a cracker/a bit more supple). Brush both sides on your pizza crust lightly with olive oil, it will prevent it from sticking to the grill. DO NOT over load your pizza or it will fall apart!
We made 4 kinds:
- Pesto + Goat cheese
- Herbes de Provence + Swiss/Gruyere + canned artichokes
- Tomato sauce + Mozzarella + prosciutto + diced fresh tomato + arugula
- Tomato sauce + salami + BBQ-roasted peppers and onions + sun-dried tomatoes
