Cherry Poppins

Cocktail Recipe

Ingredients

1 1/2 Canadian Club whisky
1 oz morello cherry syrup (see on the right-hand side)
3/4 oz fresh lime juice
1 Thai basil sprig
2 oz soda water
A pinch of black pepper

Make the most of the cherry season and impress your guests with this delicious cherry poppins cocktail recipe, a drink combining homemade cherry syrup and whisky.

Preparing the syrup

Boil a bag of pitted morello cherries in 500ml of water.Cook for ten minutes, then blend using a hand blender.
Add 500ml of granulated sugar and continue cooking until all the sugar has dissolved.
Let cool.

Mixing the cocktail

In a cocktail shaker, combine the whisky, cherry syrup, lime juice, and basil (reserving one leaf for garnish).
Add ice and shake.
Strain Into a Tom Collins glass.
Add ice and soda.
Top with crushed ice.
Garnish with black pepper and a Thai basil leaf.
